Clare Valley — a plateau at 400–550 metres north of Adelaide — produces some of Australia’s most elegant and structured Cabernet Sauvignons. The cooler climate, red shale and slate soils and cool nights favour finesse over raw power. The colour is deep, brilliant purple garnet.
