Eden Valley — a plateau at 400–600 metres adjacent to the Barossa — produces Cabernet Sauvignons of a freshness and elegance rare in South Australia. The altitude’s cooler climate and shale and slate soils yield finer wines than those of the neighbouring Barossa. The colour is deep, brilliant purple garnet.
