Carignan plays a secondary but important role in the red blends of generic Provence — Côtes de Provence, Coteaux d’Aix-en-Provence — bringing structure, colour and spice to the dominant varieties of Grenache, Cinsault and Mourvèdre. The colour is sustained purple garnet.
