César is one of Burgundy’s rarest and most singular red varieties, grown exclusively in the Irancy AOC south of Auxerre. Of uncertain origin — some trace it back to Roman times — it is blended with Pinot Noir to bring structure and tannins to this atypical Burgundy red.
