Limoux — a wine appellation at the foot of the Pyrenees in the Aude — is famous for some of the world’s oldest sparkling wines. Crémant de Limoux, based on Chardonnay (at least 40%), Chenin Blanc and Mauzac, is produced by the traditional method.
