Recioto della Valpolicella — the ancestor of Amarone — is a sweet wine produced from Corvina, Corvinone and Rondinella grapes dried by the appassimento method. Unlike Amarone, fermentation is stopped before complete dryness, retaining residual sugars. The colour is very dark, dense, brilliant red-purple.
