Valpolicella Ripasso — nicknamed ‘Baby Amarone’ — is produced by repassing ordinary Valpolicella over Amarone or Recioto grape skins. This technique enriches the wine in alcohol, tannins and aromas, creating a midpoint between fresh Valpolicella and powerful Amarone. The colour is deep purple garnet.
