Saint-Aubin, in Côte de Beaune

Gamay has established itself in the valleys of Aveyron, mainly around Millau and Entraygues, where it is blended with local varieties such as Fer Servadou. The schist and granite soils and altitude give a more austere and nervy Gamay than Beaujolais, with fine mountain freshness. The colour is clear ruby red.
