Parellada from Penèdes — an autochthonous Catalan white variety grown on the altitude zones of the Penèdes, on the limestone, sand and clay of the Garraf massif highlands and Penèdes alt — is the finest and most aromatic variety of the classic Cava trinity (Macabeu, Xarel-lo, Parellada).
