Viognier co-fermented in Côte-Rôtie — the unique tradition of Côte-Rôtie (northern Rhône) authorises the co-fermentation of Syrah with up to 20% white Viognier, a practice dating back to Antiquity. Viognier brings floral aromas (violet, jasmine), complexity and colour stabilisation.
