Generic Xarel·lo sparkling — Xarel·lo is one of the Catalan white varieties best adapted to sparkling wine production. Outside the Cava DO, it can be used in sparkling wines in Catalonia (Espumoso), on the Mediterranean limestone soils — it brings body and typical herbaceous aromatics.
