Pecorino
- Origin
- Centre of Italy, particularly Marche and the Abruzzi
- Also known as
- Arquitano, Biancuccia, Dolcipappola, Forcese, Trebbiano of Arquata
The white grape variety with high natural acidity, Pecorino produces dry, tense wines, with volume. It's aromatic profile combines notes of citrus, white flowers, and aromatic plants (fennel, sage), often with a mineral touch. It can also develop a beautiful complexity with lees aging.
